--My New Best Friend--

My hubby spoiled with for Christmas with this new Kitchen Aid and I'm in love with it! I just baked a batch of cookies and my wrists don't hurt! (arthritis) It's a miracle! My 3 year old son loved being able to help me a lot easier. I didn't have to try and steady a hand mixer while I helped him dump ingredients in the bowl. It was awesome! Merry Christmas to me for sure!

P.S. I haven't forgotten or abandoned this blog, I'm just busy. Gearing up for working 7 days a week through January. But I promise, some day I'll post more recipes, and more tips and such from my Eating Clean journey!

Next week is my "Holiday Baking Week" since it will be THE WEEK BEFORE CHRISTMAS!!!! You'll find me in the kitchen stirring up some yummy fudge, sugar cookies, mint fudge and possibly some Peppermint Brittle! I've got a couple little holiday parties next week to provide Desserts at so I'm pretty sure from Monday to Thursday I'll be baking whatever I can get my hands on! YIPPEE!!! I love this time of year to bake! I love making cookies look cute, and trying new recipes. This will be my first time making fudge and peppermint brittle so wish me luck!

Kneader's Inspires

Yesterday I went to lunch with my sister and had an EXCELLENT salad! So today while I was grocery shopping I thought "I want another one of those salads" well since I don't have that restaurant we went to, near where I live I decided to pick up the things to try and make my own version of the salad. I substituted a few things, but over all it turned out GREAT! I'll be having this salad for lunch tomorrow at work!




Here is what I used:
Leaf Lettuce
Spinach
Green Onion
Craisins (dried cranberries)
Grape tomatoes
Raw sunflower seeds
KRAFT Raspberry Vinaigrette Dressing
Canned Chicken (or Turkey or Tuna is good too)

The salad from Kneaders did not have Tomatoes or Green Onion, it had mushroom. I'm not a mushroom fan...or much of a Tomato fan, but my husband loves tomatoes so I put some on our salad. I did end up eating the tomatoes, they actually weren't too bad with that tangy dressing =)
This is a great side to any meal, makes a great lunch, or if you wanted to add some grilled chicken strips it'd be a decent dinner with some bread!
